Salad days

After the excesses of the holidays, I’ve been craving clean, crisp salads. So when I had plans for a girlfriend to come over for dinner this past weekend, I grabbed Fast & Fit by Ellen Haas (Hatherleigh Press) off my bookshelf.

This book will appeal to foodies (the cookbook includes recipes from top chefs including Alice Waters, Charlie Trotter and Eric Ripert) and time-pressed, novice chefs alike (most of the recipes call for fewer than five ingredients, and all of the meals take less than 30 minutes to make).

I ended up making the Salmon Teriyaki with Orange Salad and it was exactly what I’d been craving — something good for me, with loads of flavour (the orange slices made the dish super refreshing) and it was plenty filling all on its own. I forgot to take a photo, but the pink salmon, orange slices, green arugula leaves and red onion slivers made it a feast for the eyes, too.

    Fewer than five ingredients? I’m so checking this book out. Quick and easy = key.

    No pictures (if you’re the type of person who needs gorgeously shot dishes, this cookbook ain’t for you!) but it’s got load of dishes you can keep going back to, and you can feel good about what you’re eating!
