Vegan zucchini fettucini

Yes, me (the  bacon lover) tried a vegan recipe. And I liked it.

It’s the recipe for summer squash fettucini with lemon pepper cream from Brendan Brazier’s new book Whole Foods to Thrive. He introduces the recipe by saying that if there’s one recipe you make, make it this one — so I did. I’m always struggling to include more veggies in my diet and I love pasta so was curious as this would compare.

It was good, filling, and sure, I’d make it again.

(but truth be told, I do think it’d taste most excellent with some bacon crumbled on top of it :)
